Stir Fry Paneer

  • 100 grams of Paneer/Wara (indian/african cottage cheese)
  • 2 Large Capsicum Peppers
  • 1/2 cup chopped stringbeans
  • 1/4 cup Chicken stock
  • 1 Tablespoon Curry
  • 1/2 cup Water
  • 1 Tablespoon Chilli
  • Sea Salt
  • 2 Tablespoon Ghee
  1. Heat up pan add ghee , fry paneer till golden brown
  2. Add curry and fry for 1 minute
  3. Add peppers
  4. Add chicken stock, cover cook for 3 minutes
  5. Add string beans and water cover cook for 7 minutes
  6. Add salt and chilli
  7. Open up and cook for 5 minutes till water dries up.

Enjoy As a main meal or a side dish

Roast Beef

Roast beef

 

  • Topside beef
  • 1 medium chopped onion
  • 6 cloves garlic
  • mixed herbs
  • Olive oil
  •  1 Tablespoon Sea salt
  • Bay leaves
  • black pepper
  1. Take beef out of fridge 30 mins before it goes into the oven
  2. Preheat oven to 240 degrees celsius
  3. Poke little holes in beef insert 3 cloves of garlic
  4. rub in mixed herbs, salt, pepper and olive oil
  5. In a heated pan brown all sides meat to seal in juice
  6.  Add chopped onion, 3 cloves of garlic and bay leaves in the middle of tray
  7. Place the beef on top of vegetables
  8. Reduce oven to 200 degrees celsius cook for 1hour 10mins for well done
  9. If you prefer medium takeout  10 minutes earlier
  10. Medium rare 10 – 15 mins earlier
  11. Baste halfway through cooking add a splash of water if it gets dry
  12. Let it rest for 10 mins
  13. Cover it in tinfoil and tea cloth for 15 – 25 mins
  14. Remove string.

Enjoy serve with cauliflower cheese , stir fry, gravy .

Chicken Curry

Chicken Curry 

 

  • 1 Chicken breast
  • 1/2 Teaspoon onion powder
  • 2 Cloves garlic
  • 2 Tablespoon Ghee
  • Quarter of a medium onion
  • 1 Teaspoon garam masala
  • 1 Teaspoon turmeric
  • 1 Teaspoon curry powder
  • 1 Teaspoon chilli
  • 1/2 Cup coconut milk
  • 1/2 Cup frozen spinach
  • 1 Cardamom
  • Cinnamon stick
  • Salt to taste
  • coriander / parsley to garnish
  1. Marinate chicken with onion and garlic for 1 hour
  2. In a heated pan add ghee, add cinnamon stick and cardamom cook for 3 minutes.
  3. Add chicken, fry till its golden brown.
  4.  Add chilli, garam masala, turmeric and curry powder  put a lid on the pan and cook for 5 minutes.
  5. Add coconut milk, salt and thawed spinach cover with lid and cook for 7 minutes.
  6. Garnish with with parsley or coriander.

Strawberry Chia Jam

Strawberry Chia Jam

  • 226 grams of Fresh Strawberry
  • 2 Tablespoon Chia Seeds
  • 1/4 cup Sweetener
  • 1/2 cup Water
  1. wash and chop strawberry to small sizes.
  2. Add sweetener cook for 5 mins and stir occasionally.
  3. Mash lightly.
  4. Add water and chia seeds.
  5. Stir till it has a sauce consistency and starts to thicken.
  6. Simmer for 1 min.
  7. Let it cool . put in an airtight jar store in the fridge for up to two weeks or freeze.

Low Carb soul Bread

 

  • 4 Eggs
  • 300 grams Softened cream cheese
  • 1/4 cup Melted butter
  • 1/4 cup Olive oil
  • 1/4 cup Heavy whipping cream
  • 1 Tablespoon Xanthan gum or 2 1/2 Psyllium husk
  • 2 Teaspoon cream of tartar
  • 1 Tablespoon Sea Salt or Himalayan salt
  • 1 Tablespoon Baking soda
  • 1 2/3 cup Whey protein unflavored ( Isopure)
  1. In a bowl whisk cream cheese, melted butter, eggs , olive oil, heavy cream together till it’s smooth.
  2.  Add xanthan gum, cream of tartar, salt and baking soda.
  3. Sieve in whey protein to avoid lumps whisk together.
  4. Put in a bread pan.
  5. Bake in a preheated oven at 175 celsius for 40 – 45 mins.
  6. let it cool for 10  mins.
  7. slice up loaf to 12 – 14 slices.
  8. keep in an airtight container for 3 days in a fridge or freeze.

Beef Kofta And Coconut Curry Chutney

Mince beef and Coconut curry chutney (recipe)

Coconut curry chutney

  • 150ml Coconut cream
  • 1/2 Teaspoon Cumin
  • 1/2 Tablespoon Sea salt or Himalayan salt
  • 1 Teaspoon Curry powder
  • 1/4 Teaspoon turmeric
  • Black pepper or Chilli powder

Add all ingredients in a bowl and mix together.

 

Mince Beef Kebab

  • 500 grams Mince Beef
  • 1 Tablespoon Sea Salt and Chilli flakes
  • 1.5 Teaspoon Onion Powder
  • 1 Tablespoon Mixed Herbs
  • Drops of Hot sauce
  • 6 Wooden Skewers

Soak wooden skewers in water for 20mins to prevent them from burning while cooking.
Mix all ingredients into the mince beef. Cover with clingfilm, leave in the fridge for 30mins (optional)
mold mince beef on skewers and cook for 20 – 25mins.

Enjoy with konjac rice or as a starter.

12 days of before Christmas

Cauliflower Cheese

Cauliflower cheese 

  • 100 grams Cauliflower florets
  • 50 grams Chopped Broccoli
  • 1 Tablespoon Butter
  • 1 Tablespoon Nutmeg
  • 1/2 cup Heavy Cream
  • 1 cup Sour Cream
  • 100 grams Mozzarella Cheese
  • 100 grams Cheddar Cheese
  • 75 grams ground Pork Rinds
  • Salt
  • Black Pepper
  1. Preheat oven to 180 degrees celsius
  2. Add cauliflower and broccoli and salt boil in water for 10mins
  3. In a saucepan add butter,sour cream , heavy cream and black pepper
  4. Drain cauliflower/ broccoli in colander and place in a medium sized baking tray
  5. Sprinkle some pork rinds add mozzarella cheese, cheddar cheese, black pepper followed by pork rinds
  6. Place in oven or 45 mins or until golden , crisp and bubbling.

 

 

Roast Chicken

The Perfect Roast Chicken

 

  • Mixed herbs
  • 1/2 Tablespoon Sea Salt/ chilli flakes
  •  1/2 Tablespoon Celery salt or 2 celery sticks
  • Sage/ Rosemary
  • 3 Cloves garlic
  • 1/2 Onion
  • Bay leaves
  • Olive oil
  1. take out chicken from fridge 30mins before it goes to the oven, preheat oven at 240 celsius
  2. Rub in herbs, salt,celery salt to bird
  3. Add sage, onions and 2 bay leaves into cavity
  4. Rub in olive oil
  5.  Add onions, bay leaves and celery sticks if added in the middle of the baking tray
  6. Place chicken directly on vegetables  add more oil
  7. Cook in preheated oven for 1 hour 20mins at 200 celsius
  8. Baste chicken halfway  through cooking if it looks dry add a splash of water
  9. Cover in a layer of tinfoil and tea cloth to rest for 15 mins
  10. To make gravy/jus, blend a few onions, any added vegetable and  juice from chicken. strain

Eat Fat Lose Fat Say What?!!

Most times I get this reaction when I introduce people to this lifestyle. Eat fat and low carbs!!20161201_133434

How can you eat fat? Why would you do that to yourself when there is a perception that you may have a heart related disease or grow morbidly obese, fatty liver and so many other concerns about this way of eating. Actually this doesn’t happen……….in fact it’s a very healthy way of eating.

Let me explain how the ketogenic diet works in a few words. In most low carb diets the key is to eat low carbs to try to get the blood sugar levels stable. With low blood sugar, less insulin is produced and by eating food high in fat. The body uses the fat as fuel instead of carbohydrates making you a fat burning machine and it comes with other great benefits too.

Most importantly minimize your intake of sugar and starches

In a high fat diet eat good saturated fats like coconut oil, olive oil, all animal based fats and monosaturated fats, palm oil, almond oil and avocado oil. These are essential for a healthy immune system, dense bones, proper hormone levels, heart health, vitamin E and great vision.img_20141007_133354

Avoid hydrogenated fats like canola oil, rapeseed oil and margarine.

No, survival isn’t dependent on fat alone but it’s the main source of fuel for the body. Eat protein from fish meat, nuts, most vegetables that grow above ground like cabbage, cauliflower, dark leafy vegetables. Fruit is candy from nature try eating berries mostly.20160917_190955
