- 1 Chicken breast
- 1/2 Teaspoon onion powder
- 2 Cloves garlic
- 2 Tablespoon Ghee
- Quarter of a medium onion
- 1 Teaspoon garam masala
- 1 Teaspoon turmeric
- 1 Teaspoon curry powder
- 1 Teaspoon chilli
- 1/2 Cup coconut milk
- 1/2 Cup frozen spinach
- 1 Cardamom
- Cinnamon stick
- Salt to taste
- coriander / parsley to garnish
- Marinate chicken with onion and garlic for 1 hour
- In a heated pan add ghee, add cinnamon stick and cardamom cook for 3 minutes.
- Add chicken, fry till its golden brown.
- Add chilli, garam masala, turmeric and curry powder put a lid on the pan and cook for 5 minutes.
- Add coconut milk, salt and thawed spinach cover with lid and cook for 7 minutes.
- Garnish with with parsley or coriander.
