Ginger cookies
- 150 grams almond meal
- 50 grams coconut flour
- 2 eggs
- 1/8 cup olive oil
- 1/8 cup sweetener
- 1 teaspoon vanilla
- 1 1/2 teaspoon baking powder
- 1 teaspoon xanthan gum
- 1 teaspoon cinnamon
- 1 tablespoon ginger minced or 1 teaspoon ginger powder
- 1/8 teaspoon cloves
- 1/2 teaspoon salt
- cocoa nibs (optional)
Frosting (optional)
- 100 grams cream cheese
- 1/2 cup heavy whipping cream
- 1/4 cup sweetener
- 1 teaspoon vanilla
- chunk of butter
- 50g dark chocolate
- Mix all dry ingredients together.
- Add eggs, olive oil and ginger mix together.
- Make a dough.
- Place dough on parchment paper add another parchment paper on top of dough.
- Roll to 1/4 inch thick or 6 playing cards thick.
- Cut with a cutter your desired shape.
- Add cocoa nibs optional.
- Bake for 20 minutes at 180 celsius until it’s golden brown.
Frosting (optional)
- Whisk cream cheese,whipping cream and vanilla until it thickens.
- In a pan add butter and chocolate on low heat till chocolate melts mix well.
- Decorate as you like.
- Store cream cheese frosting in the freezer.
