Stuffed Bell Peppers

Ingredients

  • 250 grams mince meat
  • 150 grams riced cauliflower
  • 3 medium sized bell peppers halved and cleaned.
  • 1 medium sized onion chopped and sliced.
  • 2 medium sized tomato chopped.
  • 1 Scotch bonnet sliced.
  • 1 cup beef stock or bone broth
  • 1 Teaspoon garlic powder
  • 1 Tablespoon black pepper
  • 1 Tablespoon thyme
  • Sea salt to taste
  • oil

Method

  1. In a heated pan, add oil and sauté chopped onions for a few minutes.
  2. Add 50 grams cauliflower and fry until onions are translucent, remove from stove.
  3. In a bowl add mince beef, fried cauliflower, and onions, mix.
  4. Add garlic, thyme, and salt to taste mix well.
  5. Stuff mincemeat into bell peppers.
  6. In a heated pan first add remaining cauliflower, scotch bonnet and sliced onions, place stuffed bell peppers over cauliflower, and then add chopped tomatoes and beef stock.
  7. Cover pan and let it simmer for 15 min.
  8. Serve hot.

Tabbouleh

Tabbouleh Keto style

INGREDIENTS
• ½ cup parsley or coriander minced
• ¼ cup mint leaves minced
• ½ Cup Cauliflower (steamed for 7 mins) or cabbage grated
• 2 Chopped spring onion leaves
• 1 small Clove of garlic minced
• ¼ cup olive oil
• 1 small tomato chopped
• 1 lemon freshly squeezed
• Sea Salt and black pepper to taste


METHOD


I. Mix olive oil, lemon juice, salt and pepper together.
ii. Add remaining ingredients and mix well

Oven Grilled Chicken Fajita Bowl

Cauliflower / grilled chicken fajita bowl

INGREDIENTS (for Marinade)

  • 4 Chicken breast
  • 1/2 Cup olive oil
  • 1 lime juice
  • 1 Tablespoon smoked paprika
  • 2 Crushed garlic
  • 1 tablespoon Coriander
  • Cameroon pepper
  • 1 teaspoon ground cumin
  • Sea salt
  • Zip lock bag

OTHER INGREDIENTS

  • Sweet Peppers sliced
  • Fajita spice mix
  • 2 Cup riced Cauliflower
  • 1/2 cup Chicken stock

Method

  1. Add all ingredients together to marinade chicken for 3 hours.
  2. Preheat oven at 200 degrees.
  3. Remove chicken from marinade and grill for 25 minutes at 180 degree Celsius.
  4. Steam cauliflower and chicken stock.
  5. Stir fry peppers with fajita spice mix.
  6. Slice chicken and assemble in a bowl.

Cauliflower Seafood Soup

INGREDIENTS

 

  • 2 Tablespoon olive oil
  • 1 Medium sized cauliflower Cut into small pieces
  • 1 Medium sized onion thinly sliced
  • 1 Tablespoon turmeric powder
  • 100 Gram mix calamari, squid , crab etc
  • 100 Gram prawns
  • Mussels or clams
  • 2 cups  Fish stock
  • 1 Tablespoon chilli powder
  • Salt to taste
  • 1 Cup full fat Greek yoghurt
  • 1 lemon

METHOD

  1. In a heated deep pan, add olive oil.
  2. Add onions and cook for 3 minutes.
  3. Add cauliflower florets and cook for 7 minutes 0n medium heat.
  4. Add turmeric powder and increase heat .
  5. Add prawns and calamari, cook for 1 minutes.
  6. Stir In fish stock  and chilli powder cook for 2 minutes and simmer, add mussels and cook for another 5 minutes.
  7. Remove from heat and stir in yoghurt.
  8. Season as desired, serve with grated lemon zest or juice.

Enjoy as a meal or serve with zero carb rice.

Serve 4 people.

Chicken Pilau

RECIPE

INGREDIENTS

  1. 3 Tablespoon butter or ghee
  2. 1/2 Piece of cinnamon stick
  3. 4 Cloves
  4. 1 Tablespoon of chilli powder
  5.  1 Teaspoon fennel seeds
  6.  1/2  Teaspoon saffron
  7. Shredded roasted chicken
  8.  3 Tablespoon unsweetened  yogurt
  9. 250 Gram cauliflower rice
  10.  1 Cup chicken stock
  11.  Sea salt to taste

 

METHOD

  1. In a  heated deep pan, add ghee/butter.
  2. Add cinnamon stick and cloves and fry for 30 seconds.
  3. Stir in fennel seeds, chilli powder and garlic fry for 30 seconds.
  4. Add chicken and fry, stirring for 5 minutes.
  5. Add yogurt a spoonful at a time, stirring until absorbed before adding the next spoonful.
  6. Cover and reduce heat  and simmer for 10 minutes.
  7. Add cauliflower, saffron and  salt.
  8. Cook for 10 minutes.

 

Garnish with spring onions, toasted almond flakes.

Cauliflower Cheese

Cauliflower cheese 

  • 100 grams Cauliflower florets
  • 50 grams Chopped Broccoli
  • 1 Tablespoon Butter
  • 1 Tablespoon Nutmeg
  • 1/2 cup Heavy Cream
  • 1 cup Sour Cream
  • 100 grams Mozzarella Cheese
  • 100 grams Cheddar Cheese
  • 75 grams ground Pork Rinds
  • Salt
  • Black Pepper
  1. Preheat oven to 180 degrees celsius
  2. Add cauliflower and broccoli and salt boil in water for 10mins
  3. In a saucepan add butter,sour cream , heavy cream and black pepper
  4. Drain cauliflower/ broccoli in colander and place in a medium sized baking tray
  5. Sprinkle some pork rinds add mozzarella cheese, cheddar cheese, black pepper followed by pork rinds
  6. Place in oven or 45 mins or until golden , crisp and bubbling.
