
INGREDIENTS (for Marinade)
- 4 Chicken breast
- 1/2 Cup olive oil
- 1 lime juice
- 1 Tablespoon smoked paprika
- 2 Crushed garlic
- 1 tablespoon Coriander
- Cameroon pepper
- 1 teaspoon ground cumin
- Sea salt
- Zip lock bag
OTHER INGREDIENTS
- Sweet Peppers sliced
- Fajita spice mix
- 2 Cup riced Cauliflower
- 1/2 cup Chicken stock
Method
- Add all ingredients together to marinade chicken for 3 hours.
- Preheat oven at 200 degrees.
- Remove chicken from marinade and grill for 25 minutes at 180 degree Celsius.
- Steam cauliflower and chicken stock.
- Stir fry peppers with fajita spice mix.
- Slice chicken and assemble in a bowl.
