Ingredients
- 4 Eggs
- 1 Cup Heavy cream or 1 Cup coconut cream
- 1/2 Cup granulated Erythritol or keto Sweetener of your choice
- 1 Teaspoon Xanthan gum
- Mint extract
- Drops of green food colouring gel.
- 1/2 Cup unsweetened Dark chocolate
Method
- Chop chocolate into bits and set aside.
- Blend all other ingredients together until thick.
- Add chopped chocolate into mix and stir well.
- Pour mix in an airtight container and freeze until solid.
