- Mixed herbs
- 1/2 Tablespoon Sea Salt/ chilli flakes
- 1/2 Tablespoon Celery salt or 2 celery sticks
- Sage/ Rosemary
- 3 Cloves garlic
- 1/2 Onion
- Bay leaves
- Olive oil
- take out chicken from fridge 30mins before it goes to the oven, preheat oven at 240 celsius
- Rub in herbs, salt,celery salt to bird
- Add sage, onions and 2 bay leaves into cavity
- Rub in olive oil
- Add onions, bay leaves and celery sticks if added in the middle of the baking tray
- Place chicken directly on vegetables add more oil
- Cook in preheated oven for 1 hour 20mins at 200 celsius
- Baste chicken halfway through cooking if it looks dry add a splash of water
- Cover in a layer of tinfoil and tea cloth to rest for 15 mins
- To make gravy/jus, blend a few onions, any added vegetable and juice from chicken. strain
